Giant Arepas with Aged Gouda

 

3 cups masa harina
4 ounces aged gouda or Monterey jack cheese, coarsely grated
2 tsp coarse sea salt or kosher salt
Neutral oil, such as grape seed, canola or sunflower, for frying

 

Method
  1. Preheat oven to 250°F.  Place a rimmed baking sheet in the oven.
  2. In a large bowl, combine the masa, cheese, and salt. Add 3 cups of water and mix well. Cover the bowl w/plastic wrap or a plate and set aside for 5 minutes.
  3. Form dough into 4 balls.
  4. In a large skillet over high heat, warm 1 tablespoon of oil (or divide oil between 2 small skillets).
  5. Take one ball and slap it between your palms to flatten it into a 6-inch round. Place the dough in the skillet and reduce heat to medium. Cook until golden and crispy, about 5 minutes per side. Transfer the cooked arepa to the pan in the oven to keep warm. Repeat with remaining pieces of dough, adding more oil if necessary.
