Sausage and Peppers

1 tablespoon extra virgin olive oil

1 clove garlic minced

6 UN-cooked chicken sausages (preferably spicy Italian flavor)

1 medium yellow onion, chopped

2 cups sweet peppers, chopped

6-8 medium-sized tomatoes, quartered

2 tablespoons tomato paste

1 bunch basil, coarsely chopped

crushed red peppers, to taste

salt and pepper to taste

Method
  1. To begin, cook sausages in deep pan on medium heat, until each side is just golden brown. Remove sausages from heat.
  2. In same pan, add olive oil, garlic and onion. Cook on low heat until onion is tender. Add chopped peppers and cook over medium heat until just soft, about 5min.
  3. Continue with Medium heat, and add tomatoes, tomato paste, basil and crushed red pepperuntil soft. Slice sausages and add to the sauce and simmer for about 10-12 minutes on medium low heat. Serve on a hoagie style roll, over pasta or on it's own with salad.
